Enjoy the sweet sauce

This dish is unique because the grilled eels are steamed afterwards. With the smoky caramelized surface still intact, the steaming allows the flesh to plump up and become fluffy. Along the banks of the Honmyo river, where fresh eels used to get caught, numerous restaurants along both banks would serve up this favorite. Each restaurant will have their own very well guarded dipping sauce recipe.
